prosciutto and goat cheese bouche with fig and golden raisin compote, honey candied walnuts and watercress

This is a puff pastry shell known as a bouche it is the same as a vol au vant . I won 3rd in a honey competition with this recipe

Baguettes at home

So this is my first post. I intend on keeping a blog to distract me from the bar, and to document some of the good stuff I am making. These baguettes were made in one day with no pre-ferment. It used a straight mix meathod. Here is the formula








1.Baguettes

Bread Flour 100%

Water 67%

Yeast 1%

Salt 2%
